Chapter I: Preface: To Second Edition
The first edition of this work was received by both the press and the people with favor, and the immediate demand it met with confirms our opinion that the people are awakening or beginning to realize the great importance of the food question, and its relation to both the mental and physical man.
The most convincing evidence we have had in regard to the correctness of our theory is found in the letters we have received from the people of nearly every English speaking country, telling of the benefits they have gained by adopting the use of elementary foods, according to the theories advanced in this work.
The fact that people in nearly all walks of life are giving so much thought to this subject, leads us to hope that the time will soon come when it will be a matter of common knowledge that incorrect feeding is the primary cause of nearly all diseases and that correct or natural habits of eating will prevent and cure the great multitude of ills with which the majority of mankind are afflicted.
The most learned and advanced thinkers of every civilized country are gradually turning their attention more and more each year to the food question to ascertain the causes of disease and its cures; it will therefore be but a few years until the light of the world’s greatest minds will be turned fair and full upon the material out of which MEN AND WOMEN ARE MADE, and the immutable laws of nature will be their “star by day and pillar of fire by night.” It is then that the food question will in very truth become a science.
